i will never tire of soup, and will look forward to soup every season. but particularly this time of year when the farmers market is abundant with new veg like peas & artichokes, and of course when the brothy soups of spring come about.
soups where all the veg is lightly poached in a warm salty broth until just soft, and perfectly tender. and let’s be honest—there really is nothing better than a soft, perfectly cooked potato in broth.
there is a lot of celery in this soup, and it is meant to be that way. i feel like celery is a forgotten vegetable for most, but it’s up there with the top 3 vegetables for me. i wanted it to be the star of this soup. so you will see heavy celery here!
