garlicky kale, spinach and potato soup with a soft egg & kale croutons

because it’s still soup szn

this is my riff on the classic leek & potato soup. i wanted it to be just a fragrant from an allium perspective, but swapped out leeks for loads of garlic.

i also wanted to add more greens—a lot of greens, in fact! because we still deserve to nourish ourselves immensely, even if we only have a few ingredients to hand.
